The Role of Social Health and Demographic Factors in Bread Quality: An Ecological Study in Isfahan, Iran

Social health has been defined as participation in and responsibility for social processes. Because bread is considered an essential staple food Iran, several policies have implemented to improve the quality of bread, regardless aspects. The current study aims investigate relationship between quality, bakers’ health, demographic factors. This was a cross-sectional ecological conducted Isfahan, Iran. Stratified sampling used select 171 traditional bakeries from Isfahan’s 15 municipality districts. Adult Health Questionnaire collect data. A laboratory test employed obtain data on quality. Spearman correlation test, bivariate logistic regression, multiple regression were applied analyze results showed that 36.26% had pH ≤ 6 (high-quality bread) 63.74% them > (bread low). use baking soda negative with ( P value = 0.029).
